My monkey of a daughter needed some entertainment. Although she had managed to entertain herself quite well, body painting, drawing on the wall "No on the door Mummy", picked all the tomatoes from the vine and tried to work out how to behead her $2.00 Barbie. OK we needed a little structure to our day and a break from the boring domestics. So Miss T's breakfast had consisted of 2 spoonfuls of cereal, cheesy goldfish and a yoghurt. So, pancakes for lunch "Mickey Mouse Pancakes, of course"!
Summit has a fabulous local diner and our little Monkey loves the Mickey Mouse Pancakes, which by the way is a round pancake with ears! "The boring round pancakes, according to her have lost their ears, so we draw them on with maple syrup."
A little interesting fact about our fabulous local dine is that it's listed in a book by Patricia Schultz?" '1000 Places to See Before You Die'. So, only 999 more places to go!

"Made a Mickey Mouse Pancake" xo
This is a fabulous Recipe...
1 cup of Self Raising Flour
1/4 tsp bicarbonate of Soda
1/4 cup of caster sugar
1 1/4 cup of Buttermilk
Shhhh- I add 3/4's of a banana (mashed)
Place all the ingredients into a your kitchen aide bowl (a must have in every kitchen), add the banana and mix. Heat fry pan over med/low. Spray with oil and pour in batter. Cook for 2 minutes or until the bubbles form on the surface. Turn and then cook for another minute or so..
