The other night I was running late and the pantry was rather bare...not much apart from chicken and some mushrooms...but I managed to pull together the following EASY AS casserole. A bit of a cheat - but no one needs to know. All you need is your good friend Mr Campbell to help!
Chicken, Mushroom and Thyme Casserole (serves 4) 5- 6 chicken pieces (legs and breasts work well) 1 red onion sliced 1 Tbspn olive oil 2 - 3 cloves of garlic salt and pepper 2 cups mushrooms chopped 1 can of mushroom soup (I used Campbells Portobello Mushroom and Madeira Soup*) 1/3 cup of water Handful fresh thyme, chopped Brown chicken in oil in a medium casserole or dutch oven. Add onions, garlic and mushrooms and saute until golden. Add mushroom soup, water and thyme, mix and then cook in 350 F (180C) oven with lid on for approx 1 hour stirring occasionally. Serve with rice, couscous or mashed potatoes. *THE CHEAT |
