Zucchini Slice
An Aussie Favourite with an American Twist...

Pantry Must Haves
1/2  a large onion, finely chopped
1/4 cup of olive oil
4 small zucchinis, peeled and grated
3 medium carrots, peeled and grated
1 cup or more of chopped ham off the bone or bacon (optional)
Sliced mozzarella cheese (up to you, about a cup and a 1/2)
1/2 teaspoon of salt
a little pepper
4 eggs, beaten
1 1/2 cups of sifted self raising flour

Preheat the oven to 350F or 180 C
Directions
  1. In a bowl, place the chopped onions and oil, stir well.
  2. Add zucchinis, carrots, mozzarella and ham/bacon (optional). 
  3. Add salt and pepper to beaten eggs and add to the mixture.
  4. Add flour slowly and mix as you go.
  5. Place into a greased loaf tin and cook for 45 minutes or until golden brown (test using a metal skewer).
  6. Cool and then slice.
  7. Serve with a salad or with some good old tomato sauce.
