INGREDIENTS
  • Handful fresh mint leaves
  • 3 whole fresh raspberries
  • Juice of 1 lime
  • 2 teaspoons sugar
  • Ice
  • 1 1/2 ounces spiced rum
  • Splash club soda





DIRECTIONS:
  1. In a highball glass, muddle the mint, raspberries, lime juice and sugar.
  2.  Fill a cocktail shaker with ice; 
  3. Add the rum and shake for 15 seconds. 
  4. Pour into the glass and top with the club soda.

As it's winter for many of our readers, but summer for others, we decided to move away from the cold for a bit and serve something a little tropical for this week's Fabulous Friday Drinks.  Inspired by the recent spate of Mexican gingerbread house construction, and playing Barbies with a 3 year old, here is a little breath of Cancun...

Honeydew Margaritas
(serves 4)
Half a honeydew melon 
1/2 glass tequila
1/4 glass cointreau/triple sec
1 1/2 glasses ice
1/2 lemon (squeezed)

1/4 glass simple syrup
rough sea salt

Blend melon in food processor til liquidised.
Add ice, tequila, cointreau, lemon juice and simple syrup.  Blend for 20 - 30 seconds.
Serve in glasses rimmed with lemon and salt.

Way back, when the ladies on my street played bunko monthly we always served beer, wine, small nibbles and a cocktail of the evening.  One year we decided to make things "fun" (aka: more complicated than it needed to be) and each month had a color theme.  (My favorite by far was the "brown month" since it was all chocolate martinis, fondue and oreos.) But December was the "green" drink and the Grasshopper with it's minty flavor and vibrant color served as a perfect holiday cocktail.  It's actually too creamy for me, and I've since discovered there is another drink called the 
flying grasshopper...no cream just more liquor 
and that sounds right up  my alley!

Try both recipes and be sure to holiday them up garnishing with a spring of mint and half a maraschino cherry on top!

Grasshopper:
1 part cream
1 part green mint liqueur
1 part white cacao liqueur

Pour the liquids over ice in a shaker and shake vigorously!  Strain and serve.

The Flying Grasshopper:

2 parts vodka
1 part green mint liqueur


1 part white cacao liqueur



Pour liquids over ice in a shaker shake vigorously, strain and serve! 
PS I'm not a lover of the cherry but they do look festive in the bottom of this glass!
