As many of our followers know...I've been doing a bit of juicing lately. It's been a pretty good experience and helped me shed a few pounds. It has also opened me up to a whole new world of mixers...come on, by now you must know that I think about adding liquor to pretty much every beverage I come across. A bit bored with super sweet martinis and with half a bottle of carrot juice handy I decided to give a carrot martini a whirl. It took a few attempts, but in the end the addition of cilantro...which I was originally going to use to look like carrot stalks for a picture...made this cocktail sing. I know cilantro is one of those polarizing foods...you either LOVE it or HATE it...so if you're a hater, leave it out
or maybe try adding another herb.

You'll need:
3 parts carrot juice
1 part vodka
1 part triple sec
several cilantro leaves diced finely
Fill a cocktail shaker with ice and add all the ingredients. Shake vigorously, and strain into a martini glass. I used a metal strainer that goes over the shaker to let the cilantro bits pour more easily into the glass. Garnish with a spring of cilantro.
