This is just quick, as I need most things to be these days, and totally un "foodie" esque, as it involves hot dogs...which you will remember is Charlotte's absolute favorite food, followed closely by shredded chicken.

Delicious version of a corndogmuffin!  It's from another great blog called Money Saving Mom.  She does this fantastical thing where she makes a whole bunch of freezer meals in an hour, and this is included.   

Okay, back to the "in-a-hurry!" thought.  I just had to share this with all my wonderful mom friend readers, because it took me five minutes, and I'll serve this with some raw veggies, and lunch is done.  My kids will eat it, dang...I'll eat it.  I love things that are quick and delicious.  So, with that here's the recipe and off you go. 

This is the "healthier" version, the unhealthy version can be found on her site as well.  We went with the healthy version, since it's lunch, and well, uses hot dogs.  
1 cup whole wheat flour (although, I used regular ap flour) 
2/3 cup cornmeal
2 T. honey
1 1/2 t. baking powder
1/2 t. dry mustard (I omit) 
1 egg
3/4 cup milk
2 T. oilYou then place a third of a hot dog in each muffin spot, bake at 400 degrees til golden.  A note on the hot dogs, I only use Applegate All Beef Uncured Hot Dogs.  You may like something else, but those contain no nitrates, and are freaking delicious.  

Done!   And they're pretty great.  I did something wrong, because the hot dog is supposed to end up in the middle of the muffin, but the way they turned out is probably better for my kids, as they're more likely to eat it knowing there is a hot dog involved.  I would recommend a few things though in hindsight...spray some cooking spray into the muffin pan, or papers if you are using the lower fat version, and if you want to make sure the hot dog sinks in, press it into the middle of your batter.  

It gains approval from Annie, who wouldn't take the time to grin at the camera with the corndogmuffin.
