Last night the CP team went out for drinks and Tapas at 6 Highland Place, in Maplewood Village.  I challenged them to make me a good Cosmo...because I'm picky when it comes to Cosmos, since I make a pretty good one!  They did a great job...wonder if they stole my recipe!?

1 Part Vodka

½ Part Triple Sec

½ Part Rose’s Lime Juice

2 Parts Cranberry Juice

A few slices of fresh lime

Rim glass with lime and squeeze the juice in, discard "used" lime wedge.  Mix all the liquid ingredients in a shaker with ice.  Shake well and strain into a martini glass. 
Garnish with another slice of lime.


  1. A carton of Apple Cider
  2. Rum- to taste (add a little at a time)
  3. Mulled spices

Pour apple cider, rum and add in a handful of spices into a pot and simmer for 15-20 minutes

Something calming and warming

Winter is coming (too soon) and there is nothing better to warm up (or start your day) with than Baileys & coffee. Unfortunately it has dairy, and I always had to miss out, until now.  Here's a great recipe for lactose/dairy free Baileys-style liqueur.

1 teaspoon espresso coffee 
2 teaspoons unsweetened natural cocoa powder 
1 cup almond milk
1.5  cans coconut milk
1 tablespoon honey 
1 to 1 1/2 cups Irish whiskey
1 teaspoon vanilla extract 
1/4 teaspoon almond extract (optional)

In a small bowl or cup, mix together instant coffee, cocoa powder, and 2 tablespoons of the coconut milk until smooth. 

Using a conventional or hand-held immersion blender, combine the coffee cocoa mixture, remaining coconut milk, almond milk, honey, Irish whiskey, vanilla extract, and almond extract and blend on high for 20 to 30 seconds or whisk until thoroughly combined. 

Transfer to a container, seal tightly, and store in the refrigerator. 
For the best flavour, let chill at least overnight to allow the flavors to meld together. Shake well before using. 
[This should keep for up to 2 months in the fridge].

Simpicity at its best   I am always mixing together this and that to find a drink that both tastes good, and either contains something good for me or isn't' especially high in calories.  This super simple grapefruit fizzy fits both of those categories! 

Grapefruit is known for its super tart taste, but did you know that it is responsible for a whole host of different great health benefits?  I found this great juicing website that lists out all these wonderful things about grapefruit.  My favorites thing was that bioflavonoids found in grapefruit was discovered to even halt cancer cells from spreading in breast cancer patients, by ridding the body of excess estrogen.  Holy cow!  another good point is that grapefruit juice will give your immune system a boost, thereby helping you prevent, or recover from a cold.  So basically, what I'm telling you, is that you should hurry up and make this drink, lift a glass, and cheers to good health! 

To make it, I fill a pint glass with ice (if you are eyeing my super cool Doyle pint glass, and would like one for yourself, I have a case leftover and might consider sharing)  Pour 2 or 3 ounces vodka ,depending on how long a day you've had, over that ice.  Fill half of the remaining space in the glass with 100% grapefruit juice, and the other half with seltzer.  I always use pomegranate, but plain or grapefruit flavor will work too.  Pop in a straw, and drink on! 

If you made this with 2 ounces of vodka, you are looking at a slim 150 drink.  If you had a rough week, and opted for 3 ounces, you need to add 65 calories!!!   Enjoy.
