Elderflower infused cupcakes with Rose Tea Butter Icing and White Chocolate

Nikki this recipe is for you, to honor the gallons of St Germain and coffee we have consumed. To celebrate the laughs, kitchen experiments,  road trips and our giggling girls...True friendship is rarely simple and so hard to find. Pantry Must Haves

250g butter (room temp)
1 1/2 cups of sugar
4 eggs (room temp)
1 1/2 cups of SR flour
1 1/4 cups of plain flour
1/2 cup of cream
1/2 cup of Elderflower Cordial 
1 tsp of vanilla extracts


4 cups of icing sugar
125g of unsaled butter
2 tablespoons of cream
2 tablespoons of strong tea (eg Rose Tea by Twinnings)

Sift the icing sugar. Then place butter, cream, tea, and half the sugar into a large mixing bowl. Mix until smooth and then add the remaining sugar...Using a knife, smooth on the icing and then grate over some 'GOOD' white chocolate. Decorate with edible flowers. 


  • Using an electric mixer, cream butter in a large bowl
  • Combine the Elderflower cordial and cream, allowing 10 minutes to infuse.
  • Add sugar gradually and beat in each egg.
  • Sift flour.
  • In four parts, alternating between cream mixture, vanilla and flour. Beat after each addition.
  • Pour into cupcake cases and cook in a preheated oven at 325 F / 180c for 15 minutes.

Serve with St Germain infused Champagne and you'll have the perfect afternoon tea of laughs xoxo

The Milk Bar - an Aussie kids' lolly(candy) store; ice creams, milk, bread, smokes, drinks and mixed lollies... 1 cent, 2 cent, 5 cent and 10 cent lollies: On the weekends dad would give us 20 cents each, so he could read the paper in peace and my darling brother, who wasn't so darling then, would run to the Milk Bar and get 20 cents worth of 1 cent lollies. 20 lollies for 20 cents - the MORE theory made perfect sense, but as we've since learn't, "more doesn't necessarily mean better..." And yes, they were cheap, stale and nasty but we loved them, just as much as my kids today love this crap! American Candy is super exciting but somehow it all tastes the same.  But it looks good!

Anyway, how does one get rid of this pillowcase of candy, collected from the illegal Halloween?! That snowstorm that we had closed our schools for a week and cancelled our Halloween, no trick or treating this year! The convict in me (who by the way isn't a fan of this candy fest) sent out an email, after receiving a standard call from the mayor ("Halloween, has been canceled due to safety."), organised a street Trick or Treat. Well the rumor spread quickly and kids came from everywhere! It was truly amazing, actually moving. A town that had been in darkness for days had come to life.

We made Rum apple cider (See Recipe section) for the big people, gave out candy to the local kids and one brave friend hosted a pizza party xo. One issue, now we have a pillowcase full of candy, that I tried so hard to give away! Come Friday, it goes into the mummy filing cabinet, "the bin." It was a memorable Halloween, now bring on the Turkey xox

Cupcakes to die for...
250g unsalted butter
2 cups sugar
4 eggs
1 1/2 cups of self raising flour
1 1/4 cups of plain flour
1 cup of milk
1 tsp Vanilla Extract
Preheat oven at 345 F
Cream butter, in a large bowl. Add sugar and beat until mixture is light. Add eggs (one at a time) beating well between each. Combine sifted flours. Add flour in 4 parts, alternating milk and vanilla; beat well...Using an ice-cream scooper, place one larger scoop into cupcake cases... Bake for 15-20 minutes...Pure Happiness xox
